Spinach crepes

Ingredients:
150 gr flour
salt
2 dl milk
3-4 eggs
2 tblsp oil
450 gr spinach
1 onion
2 garlic
20 gr butter
30 gr pine nuts (pignolia) or sunflower seeds
pepper
salt
Muscat nut
some lemon juice
100 gr sheep’s milk cheese
30 gr margarine

Preparation Method:
Mix flour and salt, add the milk and stir to a smooth dough, then beat eggs and oil into the dough. Let it rest for 30 minutes.
Clean the spinach, the onion and the garlic, then chop onions and garlic fine.
Heat the butter; braise onion and garlic with the pine nuts. Add the spinach and heat it well, then season with salt, pepper and Muscat nut. Add the crumbed sheep’s milk cheese to the spinach and mix well.
Prepare 4 pancakes (crepes) in a coated pan.
Roll the pancake with the spinach mixture.
Pancakes should be served hot.
