Fish Knusperli

1 kg fish filet
grinded pepper
For the dough:
about 150 gr flour
2 dl beer
1 tblsp olive oil
3 egg yokes
3 egg whites
Muscat nut
oil for frying
Before Preparation:
Prepare a frying pan or preheat the deep fryer to 170 degrees.
Preparation Method:
Cut the fish filets in 1.5 cm broad stripes. Season with salt and pepper.
Dust them with some flour.

For the dough:
Put the flour in the middle of a dish. Slowly add the beer, the oil and the yokes. Stir to an smooth dough.
Season to taste with salt, pepper and Muscat. Whip the egg white stiff and combine it gently with the dough.
Dip the flour dusted filets into the dough and fry them crispy in the oil.
Serve warm.
