Creamy Pumkin Soup

Ingredients for 4 portions:
600 gr pumpkin pulp
1 carrot
50 gr celery
1 piece leek
60 gr butter
100 ml white wine
600 ml clear vegetable soup
200 ml cream
1 piece parsley
salt, pepper to taste

Cut the core of the pumpkin, the carrot and the celery into medium cubes. Slice the leeks.
1. Combine all the vegetables into heated butter and let them cook for 2 minutes. Reduce heat to low, add the white wine, the vegetables soup and let it cook for 40 minutes.
2. Crush the vegetables with vertical mixer and add half of the cream then spice it.
3. Ladle into individual soup bowls, garnish each serving with sour cream then sprinkle parsley on top.
