Vegetables with smoked fish

Ingredients for 4 portions:


 300 gr smoked fish (mackerel, trout, salmon)
 300 gr potatoes
 1 small leek (leaves discarded, white part chopped)
 20 g carrots, diced
 100 g celery root
 1 clove garlic
 750 ml vegetable broth
 2 tablespoons chopped parsley
 2 tablespoons olive oil

Save a few leafs from parsley for decoration and chopp the rest. Heat olive oil with garlic and leek, add potatoes, carrots, celery and the chopped parsley. Combine all together. Add vegetable broth and let to cook for apx 15 minutes. Cut the fish in medium sized diced. When the vegetables are cooked, add fish, mix carefully and allow it to cook for a few more minutes but make sure to dont bring it to a boil. Add salt and pepper to taste. Serve on large plate, add chopped parsley on top and decorate with parsley leafs.
